Sunday Chat – Garden and Sewing from From My Carolina Home

It is hot and humid here now, not my favorite time of year. I really do hate the heat, especially when it climbs above 80 and the humidity is high. The good things about summer, though, are pretty birds, beautiful flowers and fresh produce. Our local flock of goldfinches are feasting daily at the feeder. Here, six males are cooperating nicely, sometimes they peck at each other. The ladies were all hanging out in the oak tree.

In the Garden, the Kitchen, and the Sewing Room from From My Carolina Home

With a few days of warming weather and lots of rain, things are starting to happen in the garden. Oliver now has a buddy, or maybe a mate, who knows? They are coming by together to get their tidbits, Oliver is on the retaining wall on the left, while his buddy (paramour?) is on the driveway lower right. No, I am not sure at all that it isn’t Olivia, LOL!

Butternut Squash Lasagne from From My Carolina Home

In this interim between Christmas and the New Year, it is good to have a meal that is lighter and vegetarian based, after days of heavier meals. With this in mind, I roasted a small butternut squash, and adjusted my recipe for lasagne to make a smaller version for two. This is enough for a small 8-inch square baking dish, and will give you two meals for two. If you like, you can make it in two loaf pans and freeze one before the final baking for a meal ready to go at a later time.
